Another Randazzo family recipe passed down for generations. The eggplant is not breaded resulting in a lighter than normal Eggplant Parmigiana. The lightly fried eggplant is layered with homemade tomato sauce, fresh basil, Parmigiano-Reggiano and Mozzarella cheeses- baked until absolutely delicious. Additional ingredients include, olive oil, canola oil for frying, garlic, onion and Italian parsley. Vegetarian Friendly (Comes With A Seasonal Salad) Does Not Contain Nuts
