Description
Eggplant Parmigiana Another Randazzo family recipe passed down for generations. The eggplant is not breaded resulting in a lighter than normal Eggplant Parmigiana. The lightly fried eggplant is layered with homemade tomato sauce, fresh basil, Parmigiano-Reggiano and Mozzarella cheeses- baked until absolutely delicious. Additional ingredients include, olive oil, canola oil for frying, garlic, onion and Italian parsley. Vegetarian Friendly Does Not Contain Nuts, Eggplant, Parmigiano Reggiano, Italian Parsley, Mozzarella Cheese, ½ tsp Salt, ½ tsp Black Pepper
